Ingredients
For the Salad
- 4 cups fresh arugula
- 1 fennel bulb, thinly sliced
- 4 Satsuma oranges, peeled and sliced (could use 2 naval oranges)
- 2 ruby grapefruits, peeled and sliced
- 1/4 cup pistachios, shelled and toasted
For the Dressing
- 3 Tbsp fresh squeezed orange juice (about 1 satsuma oranges)
- 1 Tbsp fresh lemon juice
- 1/4 olive oil, high quality
- 1 Tbsp local honey
- Pinch of salt and black pepper
Instructions
- Prepare the Citrus: Wash the oranges and grapefruit thoroughly. Peel the fruit, removing as much white pith as possible, and slice into rounds or segments. Trim the top and bottom of each orange and grapefruit so the fruit can sit flat on your cutting board. Using a sharp knife, carefully cut away the peel and white pith from top to bottom, following the natural curve of the fruit. Once peeled, slice between the membranes to release the citrus segments. Set the segments aside and reserve any fresh juice collected during the process.
- Prepare the Fennel: Trim the fennel bulb and remove any tough outer layers. Slice the fennel very thinly using a sharp knife or mandoline.
- Make the Dressing: Whisk together the fresh orange juice, olive oil, lemon juice, honey, salt, and black pepper in a small bowl until well combined.
- Arrange the Greens: Place the fresh arugula on a serving platter or in a large salad bowl.
- Add the Fennel and Citrus: Arrange the sliced fennel, oranges, and grapefruit over the arugula.
- Dress the Salad: Drizzle the dressing over the salad just before serving. Toss gently if desired.
- Serve: Serve immediately while the arugula is fresh and crisp.
Notes
- Use Fresh Citrus: Freshly squeezed orange juice gives the dressing a bright, naturally sweet flavor.
- Slice the Fennel Thinly: Thin slices provide a delicate crunch and a mild, refreshing anise flavor.
- Customize Your Salad: Add pomegranate seeds or crumbled feta for extra flavor and texture.
- Prepare Ahead: Wash and prepare the ingredients in advance, but wait to add the dressing until just before serving.
