Ingredients

For the Citrus Salad

  • 1 ruby grapefruit
  • 1 navel orange
  • 1 red blood orange or raspberry orange
  • 1–2 satsuma oranges (or clementines)
  • 2 tablespoons fresh pomegranate seeds
  • Fresh mint leaves, for garnish

For the Pomegranate Dressing

  • 1 cup fresh pomegranate seeds
  • ¼ cup maple syrup
  • 2 tablespoons fresh lemon or lime juice
  • Pinch of salt
  • ½ cup olive oil

Instructions

Prepare the Citrus Salad

  1. Peel the Citrus: Cut the peel away from each citrus fruit using a sharp knife. Slice off both ends and follow the fruit’s curve to remove the skin. Remove as much of the white pith as possible to reduce bitterness.
  2. Slice the Fruit: Cut each citrus fruit into thin, even slices.
  3. Arrange the Salad: Arrange the citrus slices on a serving platter, alternating the different fruits to create a colorful display.
  4. Add the Garnish: Sprinkle fresh pomegranate seeds over the citrus and garnish with fresh mint leaves.

Make the Pomegranate Dressing

  1. Blend the Ingredients: Add the pomegranate seeds, maple syrup, lemon or lime juice, and a pinch of salt to a blender. Blend until smooth.
  2. Add the Olive Oil: With the blender running on low speed, slowly pour in the olive oil until the dressing is well combined.
  3. Adjust the Texture: For a smoother dressing, strain through a fine-mesh sieve to remove the pomegranate seeds.
  4. Serve: Stir the dressing before serving. Drizzle over the citrus salad or serve on the side.

Notes

  • Use Fresh Citrus: Fresh, ripe citrus from Freshly Picked Tour provides the best flavor and a beautiful variety of colors.
  • Remove the White Pith: Removing as much white pith as possible helps keep the salad from tasting bitter.
  • Make It Ahead: Prepare the dressing in advance and refrigerate until ready to serve. Stir or shake well before using. You can prepare the cut fruit ahead of time, just wrap the dish in plastic wrap and store in the fridge.
  • Customize Your Fruit: Substitute your favorite seasonal citrus varieties, such as satsumas, Naval or Cara Cara oranges.
