Evercrisp Apple and Broccoli Salad
This classic, crunchy broccoli apple salad combines crisp fresh broccoli, sweet apples, dried cranberries, and crunchy sunflower seeds for a delicious mix of flavors and textures. Tossed in a creamy dressing, this refreshing salad makes a great side dish for family dinners, potlucks, or holiday gatherings.
Ingredients
For the Salad
- 4 cups fresh broccoli florets, about 2 medium heads, chopped small
- 2 medium Evercrisp apples, diced
- ½ cup shredded carrots
- ⅓ cup dried cranberries or raisins
- ⅓ cup sunflower seeds or chopped pecans
- ¼ cup red onion, finely diced
For the Creamy Dressing
- ½ cup plain Greek yogurt or mayonnaise, or a combination of both
- 2 tablespoons apple cider vinegar
- 2 tablespoons maple syrup or honey
- ½ teaspoon Dijon mustard
- Pinch of salt and black pepper
Instructions
- Prepare the Broccoli: Wash and thoroughly dry the broccoli. Cut it into small, bite-sized florets.
- Chop the Apples: Core and dice the apples, leaving the skin on for extra color and crunch. If preparing ahead, toss the apples with a little lemon juice or Sprite to help prevent browning.
- Combine the Salad Ingredients: In a large mixing bowl, combine the broccoli, apples, shredded carrots, dried cranberries, sunflower seeds and red onion.
- Make the Dressing: In a separate small bowl, whisk together the Greek yogurt, apple cider vinegar, maple syrup, Dijon mustard, salt, and black pepper until smooth.
- Dress the Salad: Pour the dressing over the broccoli mixture and toss until all the ingredients are evenly coated.
- Chill: Cover the salad and refrigerate for at least 30 minutes to allow the flavors to blend.
- Serve: Give the salad a gentle toss before serving. Add extra sunflower seeds or pecans on top for additional crunch, if desired.
Notes
- Choose Crisp Apples: Evercrisp or Honeycrisp apples from Freshly Picked Tour work wonderfully in this salad because they add sweetness and maintain their crunch.
- Customize the Dressing: Use Greek yogurt for a tangier dressing or mayonnaise for a richer, creamier texture. You can also use a combination of both.
- Prepare Ahead: Make the salad ahead of time and refrigerate until ready to serve. For the best crunch, keep the nuts or seeds separate and add them just before serving.
- Storage: Store leftovers in an airtight container in the refrigerator for up to 3 days.
